Super Simple Chicken Taquitos

Takeout’s worst enemy…here’s why.
When time and forethought have both made themselves scarce, never fear. This SOS recipe can be pulled from your back pocket if the play date runs long and everyone’s hungry for lunch, or 5:00 hits and you realize you forgot to thaw the meat out…again. Instead of picking up the phone, pull out this winner and save the day. Being a hero has never been so accessible!
Recipe
8 corn tortillas
1 can chicken
1/2 C. salsa verde
1/2 C. cheddar cheese, shredded
1 T. taco seasoning (homemade recipe below)
1/2 tsp chili powder
Taco Seasoning
1 T. chili powder
1 ½ tsp ground cumin
1 tsp salt
1 tsp pepper
½ tsp paprika
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp red pepper flakes
¼ tsp oregano
To Make
Preheat oven to 375. Combine all the ingredients, besides the tortillas, in a bowl. Mix together well, making sure chicken is broken up. Warm tortillas. Spoon chicken mixture in the center of each tortilla. Roll up and lay seam side down on a baking sheet. Bake for about 15 minutes or until crispy.
To Meal Prep
The filling can be prepped ahead of time and and stored in the fridge for 3-4 days. When the need arises, just fill your warmed tortillas, bake and you’re good to go!
These also make an exceptional freezer meal. Just prep them as instructed above and freeze once cooled. To reheat, pop in the oven or microwave until warmed through. Boom!
