Easy Cajun Chicken Pasta

We’re cuing up all the cozy comfort meals to grace our plates at the end of these crisp fall days. This is a no brainer because one, who can ever resist a good pasta dish, and two anything that starts with a rainbow pile of spices is bound to be YUM. Just as edible the next day for lunch, this multipurpose meal is sure to delight whomever is fortunate enough to eat it. Try us!

Recipe

8 oz whole grain pasta, cooked al dente, rinsed & drained
2 T butter
3 cloves garlic, minced
1 lb andouille chicken sausage links, sliced into small rounds (we love the amylu brand from Costco)
3 oz cream cheese
¾ C. milk
1 C. mushrooms, chopped
1 zucchini, chopped
2 tsp cajun seasoning (see below)
salt & pepper to taste
top with fresh parmesan and red pepper flakes

Cajun Seasoning
3 T paprika
2 T salt
2 T garlic powder
1 T black pepper
1 T onion powder
1 T oregano
½ T thyme
½ tsp cayenne pepper, optional (I omit for the children’s sake)


To Make

Cook pasta according to package instructions. Melt butter in a large skillet and sauté garlic and veggies until crisp tender. Add in sausage, cream cheese, milk, and cajun seasoning simmering until the cream cheese has melted. Throw in your pasta, season to taste, and serve immediately.

To Meal Prep

This makes phenomenal leftovers—great cold or hot none of it ever finds its way to the trash. Since the mushrooms and zucchini are a bit more delicate, it’s best eaten within three days of prepping.


Pair With

Green salad, a side veggie, or some garlic toast if you really want to carb load. ;)
