The Bend Bowl
Yep, we straight up copycatted a favorite from our local health cafe…you’ll see why!
Recipe
Bowl Components
short grain brown rice, cooked
granny smith apple, chopped
prosciutto, diced
dates, diced
basil, minced
gouda, chopped
arugula (optional)
Dressing
2 T olive oil
2 tsp avocado oil
1 tsp rice vinegar
½ tsp salt
½ tsp dijon
½ tsp garlic powder
¼ tsp pepper
juice from one small lemon
honey, to taste (around a tsp)
To Make
For perfectly cooked short grain brown rice, combine 1 ½ C rice & 1 ½ C cold water in an instant pot and cook on high pressure for 20 min. Give it 10 min to naturally depressurize and then quick release any additional pressure and remove the lid. In the meantime, chop all your ingredients very small and mix up your dressing. Combine all bowl ingredients and get ready to hear your taste buds sing…
To Meal Prep
Prep each component (sans apple and basil until day of) and store separately in airtight containers to enjoy all throughout the week!
Pair With
Hearty multigrain chips in lieu of a spoon or a bed of arugula to nest in—both equally crushable.
