Simple Arugula Salad


A refreshing new way to bring greens to the table in a manner sure to delight.

Salad so good it could be eaten for breakfast.

Let’s face it the traditional green salad gets overworked. It’s brainless and it serves the purpose of getting dressing to our mouth and veggies on our plate, but it could use a break. Instead, let’s try peppery arugula, creamy feta, crunchy apples and cucumbers all smothered in a maple dijon dressing…what could go wrong? This pairs with pretty much anything and is astonishingly quick and easy to make for how gourmet it tastes. Whether alongside a quiche for brunch or a superb steak dinner it is sure to impress. Recipe

Let the inner chef sing…
arugula, rinsed & dried (mixed greens or romaine can work as well)
walnuts, chopped
apples, chopped (strawberries, blueberries, and grapes make great alternatives)
cucumbers, chopped
feta cheese, crumbled

Dressing
6 T. avocado oil
1 T. balsamic vinegar
1 T. pure maple syrup
1 T. dijon mustard

To Make

Mix all salad ingredients, toss with dressing and serve immediately.

To Meal Prep

Make the dressing ahead of time and wash fruits/veggies at the time of purchase for quick assembly.


Pair With

A steak dinner, quiche brunch, or sandwich for lunch. This salad has every meal covered.
