Blender Protein Pancakes

Finally, a pancake you feel good about eating—before, during, and after.

My own humble creation.

I couldn’t find a pancake recipe where I loved the ingredients as much as the texture and taste (even though I’m sure it existed prior to this). After much experimentation I present a lightly sweet, protein rich, pancake that is filling, fluffy (enough), and fantastic. Maybe this recipe is that great or maybe we’ve just fully adapted to life on the satiated, protein rich side of unconventional pancake street. You be the judge?

Recipe

1 C. cottage cheese
1 C. oats, rolled
4 eggs
1 banana
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking soda
optional add ins: blueberries, chocolate chips, coconut flakes…

To Make

Preheat your grill to 300 degrees (I list this detail only because traditional pancakes are cooked at a very high temperature which will ruin the texture of these). Low and slow baby. Blend all ingredients together and pour onto greased, preheated grill. Flip when bubbles present themselves. Stack, top, and enjoy!

To Meal Prep

Make a double batch just as instructed above and freeze in a sealed ziplock bag or glass container once cooled. To reheat, pop in the oven or microwave until warmed through. Boom!


Pair With

Some of our favorite toppings? Applesauce, butter, peanut butter, and real maple syrup. For a complete feast—scrambled eggs or bacon/sausage.
